Recipe: Pip and Nut’s Almond Butter Banana Bread

Almond butter banana bread, topped with (more) almond butter, berry compote and served with coconut yoghurt

Ingredients:

For the banana bread:
3 ripe bananas
1/4 cup brown sugar
1 1/2 cups whole wheat flour - but you can also use white
1 tsp baking soda
1/3 cup maple syrup
1/2 cup greek yoghurt
1 egg
1 tsp vanilla extract
150gr of blueberries
Pinch of salt
1/2 cup almond butter

To serve:

Frozen berries (for the compote) -  we like blackberries, but you can choose your favourite
Coconut yoghurt

Start by preheating the oven to 180°C. Peel and mash the bananas, and then combine all wet ingredients (plus sugar) in a bowl: mashed bananas, maple syrup, greek yoghurt, sugar, egg and vanilla extract. Add in the flour, baking soda and salt until well combined.
Stir in the blueberries. Now, add the almond butter to the batter in dollops and then gently swirl it in. Grease a loaf pan, line it with parchment paper and pour the batter in. Bake for 50-60 minutes.
While the banana bread is in the oven you can start on the compote. This is really easy, all you need to do is put the frozen berries in a pan over a low heat to defrost. Stir every now and then until you’ve got a jam-like consistency.
Once the banana bread is done, let it cool for a good half hour before cutting (yes, it does smell amazing), then top with *more* almond butter, the berry compote and serve with coconut yoghurt.
